You collect it from ephemeral blossoms, but the trick is, they only bloom under specific circumstances.

When does nightflower pollen bloom?

There are seven moon phases instead of the traditional eight — there is apparently no new moon in the Forbidden Lands. The phases are, in order: waxing crescent, first quarter, waxing gibbous, full moon, waning gibbous, third (or last) quarter, waning crescent, as shown in the screenshot above.
How to get a full moon in Monster Hunter Wilds
There’s no place to find information on the phase of the moon in your menus or your map, so you just have to wait for nighttime and go look. The moon rises in the east a little over a minute after the transition from evening to night-time and sets in the west shortly before the transition to morning.
Each time you rest at camp, the moon phase advances by one. Setting the environment to plenty each time you rest will ensure that the skies are clear. When you figure out where you are in the moon’s phases, you just have to keep resting until the next full moon.
To gather nightflower pollen, rest until the evening before the full moon. You have to be out in the wilds during the transition from evening to night-time for the ephemeral blossoms to actually open. Evening only lasts about five minutes or so, so you won’t be waiting long.
How to get nightflower pollen locations
To get nightflower pollen, wait for the full moon, then find ephemeral blossom during a fallow or plenty in either Windward Plains and the Scarlet Forest.
During a full moon, when ephemeral blossom is blooming, you’ll be able to track them on your map. Just remember that the nightflower pollen you’re looking for won’t be listed — only ephemeral blossom will be on the list.
Sadly, skills like Botist and Geolist do not get you any extra pollen.
